Chef’s Recipe

Norfolk Shortbread

450g plain flour, 1 tsp baking powder, pinch of salt, 200g lard, 130ml water, 80g granulated sugar, 80g currants & caster sugar for sprinkling


  1. Sieve flour, baking powder and salt together
  2. Rub in half the lard till it resembles breadcrumbs
  3. Add the cold water to form dough
  4. Roll out long strip (about half inch thick)
  5. Divide the lard, sugar and currants into three portions.
  6. Spread one portion of lard on the pastry, sprinkle with one portion of sugar and currants.
  7. Fold into 3 layers and turn pastry half a turn.
  8. Roll out and repeat the process twice more
  9. Cut into 8 squares
  10. Bake at 170 for 15 mins- until golden brown.
  11. Sprinkle with cater sugar whilst hot
